2021 HOLIDAY RECIPES


Cozy Dame

1 oz Bourbon
1 oz Apple Cider
6 oz Brut Sparkling Wine

Fill a glass with Ice. Pour in Bourbon, Apple Cider, and top with Sparkling Wine. Now have a seat by the fire and get nice and cozy. Enjoy!

Potato Chips and Caviar

1 Bag of Potato chips (Terra Purple are preferred, but any will do)
Jar of Caviar (Paddlefish or Lumpfish work great)
Creme Fraiche (or Sour Cream)
1 Fresh Lemon

Peel lemon zest and set aside. Whip fresh lemon juice into creme fraiche until a light consistency is achieved. Spoon a dollop of creme fraiche mixture onto a potato chip. Top with caviar. Garnish with lemon rind or minced chives. Enjoy.

Sausage Balls

1 pound bulk sausage (such as Jimmy Dean)
10 oz freshly grated cheese (Typically sharp cheddar, but you can mix in other cheeses as well)
2 cups Bisquick
Salt, Pepper, and Paprika

Preheat an oven to 400°F. Cover a rimmed baking sheet with foil and spray the foil with nonstick cooking spray. Allow all ingredients to come to room temperature. For best results use freshly grated cheese. In a large bowl combine sausage and cheese, and mix well. Incorporate baking mix, a pinch of salt, a dash of pepper, and paprika to taste. You may also add other ingredients at this stage. Apples, shallots, herbs, or sweet chili sauce all work well. Continue to mix until smooth and the consistency of dry dough. If the dough isn’t coming together you may add a small amount of milk. Roll/press the dough into 1 inch balls (by hand) and place 1 inch apart on the prepared baking sheet. Bake at 400°F 10-12 minutes or until golden brown. Serve with your choice of dipping sauce. Enjoy!

2020 HOLIDAY RECIPES

Sparkling Dame

1 oz Cointreau (or Gran Marnier)
1.5 oz Cranberry Juice
6 oz Brut Sparkling Wine
Fresh Cranberries
Fresh Rosemary

Fill a glass with Ice. Pour in Cranberry Juice, Cointreau, and top with Sparkling Wine. Skewer fresh cranberries onto a sprig of rosemary. Bruise the rosemary leaf to release aroma and garnish glass with the sprig. Enjoy.

Quick Cheese Puffs

1 Loaf of Bread
3/4 cup minced sweet onion
3 oz fresh grated cheese (Parmesan, Cheddar, or any cheese you like will do)
1 cup Fresh Mayonnaise (or store bought)
Fresh Herbs (Chives, Parsley, etc.)
Seasoning (Salt, Pepper, and any other spices you like. Cayenne, Paprika, and Zatar all go very well)

Preheat oven to 375. Cut bread into rounds. Mix Onion, Grated Cheese, Mayonnaise, and Fresh Herbs. Season with Salt and Pepper, and add any additional spices. Coat each bread round with Mayonnaise mixture and bake until golden (about 6-8 min). Serve warm and garnish with fresh chives and parsley, or thinly shaved radishes. Coated bread rounds can be kept in freezer for up to three months.

Perfect Mayonnaise

2 Egg Yolks
2 1/2 cups neutral oil
1 tsp of Dijon Mustard
Juice of 2 Lemons
Dash of Vinegar
Salt and Pepper

Whisk egg yolks until fluffy. Then add all ingredients except the oil. Once everything is will mixed and the yolks have become fluffy, begin to add the oil drop by drop. It is best to use a dropper bottle for this, and continue to whisk the entire time. As the mixture emulsifies you can begin to add the oil faster.
